The New American Cooking is a celebration of the culinary
contributions of immigrants over the past 40 years. Interpreted
by talented chefs, farmers, artisans and entrepreneurs,
the ingredients and dishes brought to the New World created
a new food culture and culinary tastes. Among the foremost
innovators and interpreters of new American cooking was
the late Jean-Louis Palladin, Executive Chef of Jean-Louis
at the Watergate. The Jean-Louis Palladin Foundation was
created to foster programs to increase the understanding
and appreciation of high-quality ingredients among young
chefs and restaurant professionals.
