for keeping the memory of Jean Louis Palladin alive
with this great web site! I was Very fortunate to have
trained under Chef Palladin for four and a half years
and assisted him in the opening of his Napa Restaurant
in Las Vegas as one of his assistant Chefs, I was there
along side Chef Palladin to go thru alot of the highs
and lows and even the beginning of the end! and I will
never ever forget! . I lived, breathed and ate the intense,
stressful, "in the sh... nights" working under Chef
Palladin, and I'll tell you! I would not have given
it up for the world!! Because I knew from day one after
meeting and getting to know what Chef Palladin meant,
and how he felt about his profession, seeing the passion
flow through him onto the plate was something I'd get
to experience only once in my career, it was truly so
mething special to experience day to day and for Chef
Palladin to teach and show me his gift along with everyone
else on our staff was something we all knew we were
getting from one of the greatest and most passionate
Chefs in the world. Looking at the pic's you have just
brings all the memory's back, I did numerous James Beard,
Promotional and Benefit Dinners with Chef Palladin and
was able to work along side and meet most of the great
chefs of today, Again thanks, and I know I can speak
for the staff we had in Vegas!

Approximately 15 years ago, I spent my days in Washington then returned every night to my fast food restaurant
business in Baltimore. Each day I spent a couple hours a day at the Watergate complex. Hardly a week would pass
when my path would cross with that of the man who to me was THE 'celebrity' chef, the great Jean-Louis Palladin.
Initially I almost shied away from him, feeling in some ways intimidated. Eventually I got over that fright and
found out that this man, whose status put him literally at the top of the food chain, was more than happy to be
not only cordial to me but downright friendly, very personable, and always thankful for appreciation and compliments
sent his way. He left a lasting impression. A couple of years ago, while staying at the Rio in Las Vegas, I was
informed of his illness and prognosis. No losses in Las Vegas will ever compare..Congratulations and thanks to
all who are doing such a wonderful job of keeping his name and tradition alive today,
